The Cabernet Sauvignon grape varietal
Cabernet Sauvignon has an interesting family history. This grape is originally from France and its parents are Sauvignon Blanc and Cabernet Franc.
Itโs really, really popular that is why it is one of the most widely planted wine grapes in the world. The number of plantings worldwide DOUBLED between 1990 โ 2010. Part of the reason for Cabernet Sauvignonโs popularity in the vineyards is that itโs hardy and fairly easy to grow.
Only healthy and ripe bunches are used for production, selected from the 29ha plantings at Stettyn.
Tasting notes
Dark, ruby red with attractive ripe cassis, spicey oak, and some savoury and game stew character. Integrated tannins offer a medium- to full-bodied mouthfeel. Will withstand further cellaring.
Food pairing suggestions
Beef or lamb stews, sticky barbeque ribs, or a truly South African Waterblommetjie Bredie.
Climate/conditions
Mediterranean climate with winter rainfall situated between the cooler, wetter Boland and the harsher, drier Karoo. Cool nights enhance the veraison with warmer days for good phenolic ripeness and concentrated flavours.
Winemaking
Grapes are destemmed and crushed on arrival at the winery. Fermentation takes place at a controlled temperature between 26 โ 30ยฐC to maximise the extraction yet cool enough to promote fresh fruit flavours. After second fermentation the wine is further matured in 225-litre French and Hungarian oak barrels for 12 โ 18 months.
