Winemaking
Cape Vintage is the South African term for a port-style wine made from a single vintage, which has been matured in oak barrels. The Portuguese varieties, Touriga National and Tinta Barroca were planted in 2005 next to the Stettyn Tasting room and have been harvested and made part of the production of the Cape Vintage. A blend of these Portuguese varietals is harvested on 26 balling sugar, fermented, fortified at the correct moment, and matured for 3 years in French oak barrels.
