Climate/conditions

Stettyn Cellar is situated on the cusp between the cooler, wetter Boland, and the harsher, drier Karoo. Icy winters allow for dormancy in the vines while the surrounding mountains provide catchment for sufficient water during the hot summer months.

With 438 hectares (70% white and 30% red varieties) of planted vineyards our modernised cellar has the capacity to harvest 7 000 tons of grapes each year. We are also fortunate to have the luxury to identify specific vineyard blocks to produce the desired quality for respectfully bulk and bottle production.

Winemaking

Grapes are carefully selected for fresh and optimal ripe characters. After crushing, the juice was reductively handled. The juice was coldly fermented to ensure maximum fruit and flavour retention. Lees contact in 20% 3rd fills French barrels for three months.
